- 5 lb. potatoes (bag of, peeled and cubed, you can add less potatoes, see recipe notes below)
- 1 onion (large, chopped)
- 1 Tbsp. oil (olive oil and avocado oil is great, or sub for the oil that you use.)
- 3 garlic cloves (minced, or 1 large shallot minced)
- 6 cups chicken broth
- 6 tsp. bouillon
- 1/3 cup cream cheese (softened)
- 1/3 cup sour cream
- 2 cups shredded cheddar cheese
- 1 tsp. thyme
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/2 tsp. garlic powder
- 1/2 tsp. onion powder
- 1/2 cup bacon pieces (real, Optional)
- 1 green onion (chopped for garnish - optional)
- onion soup mix (Optional -, . I use it for every soup now... It brings extra rich gourmet flavor to the soup.)
- 2 cups milk (or cream, depending on how thin you want your soup, optional)
