- 1/4 cup molasses (original recipe says dark, but I used regular)

Excellent cookies! I made 3 batches already. The batches I made following the recipe resulted in gingersnaps that tasted a lot like the ones in the store - not too spicy/gingery, mostly sweet and crunchy.
I did try tweaking the recipe by adding grated ginger and 1/8 tsp white pepper. The white pepper adds a lingering spiciness at the end. My friends who don't typically like sweets really loved the cookies with the white pepper because it makes them taste more on the savory end of the spectrum.
