- 1 cup granulated sugar
- 1 cup brown sugar
- 1/2 cup vegetable oil
- 1/2 cup unsweetened applesauce
- 1/4 cup plain yogurt (whole milk, I use greek, but any plain yogurt will do)
- 2 tsp. pure vanilla extract
- 4 eggs (+ 1 egg yolk)
- 2 cups unbleached all-purpose flour
- 3/4 tsp. salt
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 2 cups carrots (grated, pack the carrots gently into the measuring cup so you have a generous 2 cups of carrots)
- sauce (Caramel Rum)
- 1 stick butter (I use salted, at room temperature)
- 8 oz. cream cheese
- 3 cups powdered sugar
- 1/8 tsp. salt
- 3 tsp. vanilla
