- 3/4 cup sugar
- 3/4 cup walnuts (coarsely chopped and toasted)
- 1 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup walnut oil (or canola oil)
- 1 large egg
- 3 ripe bananas (medium to large very, slightly mashed to yield 1 1/4 cups)
- 3 Tbsp. buttermilk (or 2 1/4 teaspoons buttermilk powder and 3 tablespoons water...I actually used extra buttermilk powder, about 3 tablespoons total, but followed the 3 tablespoons water)
