- 1 tsp. vanilla extract
- 1 cup blueberries
- 3 Tbsp. avocado oil (to cook the pancakes, you can use your choice of liquid oil. However, the taste of pancakes fried in coconut oil is unforgettable.)

I made this on impulse when my family was at my place for the holidays and everybody enjoyed it. They fluffed right up when I flipped them and were delicious. I probably used an extra 1/2 cup of blueberries, otherwise I stuck to the recipe and they were delicious.
