Description
Generous cremini mushrooms enhance the meaty flavor, and a rich sour cream sauce cloaks the meat, mushrooms, and egg noodles, making this version of beef stroganoff taste like a special meal. But it comes together fast enough for a weeknight. The recipe, which makes 6 1/2 cups stroganoff and 8 cups noodles, is a Yummly original created by Ashley Strickland Freeman.

- 16 oz. extra-wide egg noodles
- 1 tsp. kosher salt (plus more for pasta water, and more to taste)
- 1 1/4 lb. sirloin steak
- 1 tsp. freshly ground pepper (plus more to taste)
- 1 yellow onion (thinly sliced)
- 2 Tbsp. vegetable oil (divided, plus more if needed)
- 16 oz. sliced cremini mushrooms (2 pkg. sliced mushrooms, each 8 oz.; or use white mushrooms)
- 2 1/2 cups beef broth
- 3 Tbsp. all-purpose flour
- 1 Tbsp. Worcestershire sauce
- 1 Tbsp. Dijon mustard
- 3/4 cup sour cream
- chopped fresh parsley

Directions
- Bring a large, covered pot of salted water to a boil. Turn off the heat, cover, and set aside.
- Meanwhile, thinly slice steak across the grain. Sprinkle all over with 1 tsp. salt and the pepper. Cut onion in half lengthwise, then thinly slice crosswise; set onion aside.
- Heat 1 Tbsp. oil in a large frying pan over medium-high heat. When oil is hot, add half the steak in a single layer and cook until nicely browned on underside, 3-4 minutes. (The steak will release its liquid before browning.) Turn steak over and brown second side, another 2-3 minutes. Transfer steak to a plate and keep warm. Repeat with remaining steak, adding a little more oil if pan is dry.
