- 1 1/2 cups flour (Bobs Red Mill 1 To 1 Baking, or other gluten-free flour blend of choice, Spoon flour into cup and level off. Do not pack the flour into the measuring cup)
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup melted butter (or Coconut Oil)
- 1/2 cup maple syrup (Honey, I used half of each)
- 1/2 cup milk (I use almond milk)
- 1 egg
- 1 egg yolk
- 1 lemon (zest of, large)
- 1 tsp. vanilla extract (or lemon extract)
- Fresh berries (A mixture of, to decorate the tops of the cupcakes, optional)
- 1 cup Fresh berries (mixed, or thawed and drained from frozen Any combo of strawberries, blackberries, raspberries, or blueberries)
- 1 Tbsp. chia seeds
- 2 Tbsp. maple syrup (or honey, to taste)
- 1/2 cup grass-fed butter (or coconut oil, softened)
- 8 oz. cream cheese (dairy-free can be used, or mascarpone)
- 4 Tbsp. honey (I recommend and used a thick raw honey like this one, if you're not opposed to using sugar, Powdered/Icing Sugar can also be used.)
- 1 lemon (juice of, large)
- 1 lemon (zest of, large, optional)
- 1 egg (+ 1 egg yolk)
- 3 Tbsp. honey
- 3 Tbsp. lemon juice
- 1 lemon (zest of)
- 1 Tbsp. butter oil (or coconut oil)
