I had left over cooked beetroot in the fridge and really was at a loss as to what to do with it. So I was very glad to find this recipe, Beetroot in my opinion needs to be an accent in a dish not the whole story.
In taste testing before putting in the blue cheese I almost lost heart, however I persevered and can report that the addition of the blue cheese is inspired. It transformed the soup from a worrying gloop to something I would be happy to serve friends.
It’s got an earthy salty flavour spiked with the sweetness of the veggies and the price of the pepper. I might make it again but only if I had leftover beetroot, I never buy beetroot so would probably not make again, as the recipe writer says it’s a good way to use up a lot of your veg box. Warming and nourishing.
