- 1 leek (large, roughly chopped, white and light green parts only)
- 1 yellow onion (small, diced)
- 3 cloves garlic (minced)
- 1/4 tsp. ground coriander

- 1 pinch cayenne pepper
- 3 beets (medium sized purple, scrubbed and cut into 1/2 inch chunks)

- 3/4 cup full fat coconut milk (save the extra from the can to add to smoothies or your morning coffee!)
