- 4 red beets (1 lb 4 oz; 560g, trimmed, peeled, and cut into 1/2-inch cubes)
- olive oil

- 1/4 cup balsamic vinegar (good quality)
- 1/4 cup extra virgin olive oil
- 2 tsp. Dijon mustard
- 2 oranges
- 2 Tbsp. juice
- 2 tsp. honey
- fine sea salt
- pepper
- 1/2 cup sliced almonds
- 3 Tbsp. white sugar
- goat cheese (or feta, add to preference, we add ~1/3 cup, 40g)
- 2 clementine (/mandarin, cuties oranges)
- 3 oranges (tangelo, or more clementines)
- 7 cups lettuce (6 ounces; 170g mixed greens, we use 50/50 blend spinach and spring mix leaves)
