- 1 sweet onion (finely diced)
- 1/2 red pepper (finely diced)
- 2 garlic cloves (minced)
- 2 Tbsp. unsalted butter
- 2 Tbsp. flour
- 2 cups beer (your favorite, I find that lighter wheat beers work best)
- 1 cup half-and-half
- 4 oz. sharp white cheddar (freshly grated)
- 4 oz. extra sharp yellow cheddar (freshly grated)
- 4 oz. colby jack (freshly grated)
- fresh herbs (I like cilantro for garnish, optional)
- salt
- pepper
- whole wheat bread (easy, bowls)

So simple, but it worked out great! No celery, carrots, chicken stock, none of the fussy stuff. This will be my “go to” recipe for beer cheese soup! TIP: if you only have pre-shredded cheese, rinse it twice in a colander with running water to get the starch and wood pulp off, as that prevents the cheese from melting properly.

I liked this, it was a very easy recipe to follow. I think I'm going to try to again with a different type of beer the one I selected was too rich I'm going to do a lighter wheat beer I suggested in the recipe.

We used Blue Moon and the beer taste was phenomenal. We used about a quarter of the red pepper instead of half just because I'm not big on peppers and it was just the right amount of flavor and spice.

Very tasty! I've been looking for a good recipe for this and I've found it! I wish I had made my own bread bowls, but I just bought fresh round pumpernickel loaves. I omitted the bell pepper because none of us like it, but it still tasted great. Very cheesy and smooth.
