The family was divided on this one, ranging from 2 to 4 stars. We used Beyond Sausage (veggie) bratwurst. We substituted kale for Swiss chard, a can of diced green chilies for the Serrano pepper, 2c of beef broth for half of the chicken broth, and diced cauliflower stalks and watermelon rind for the potatoes. We didn’t boil for the whole 30 minutes so the kale was still a little tough, but 2 of us liked the beer-y broth flavor.
