- 4 lb. beef chuck (bone-in, short ribs would work as well)
- 3 dried New Mexican chile peppers
- 2 Tbsp. olive oil

- 12 oz. beer (I used Corona as it was all I had)
- 2 cups beef broth (low-sodium if store bought)
- 1 Tbsp. fresh thyme leaves (chopped)
- 15 oz. fire roasted tomatoes
- 2 yellow onions (large, cut into wedges or thick slices)
- lime wedges (for garnish, optional)
