- 12 oz. beer (at room temperature)
- 1 1/4 cups flour (sifted)
- 1/2 tsp. sea salt
- 1 liter vegetable oil (for frying)
- 24 large shrimp (fresh, raw, peeled, washed and de-veined)
- 1 tsp. sea salt
- 1/4 tsp. pepper
- 1/2 cup flour
- 2 large egg yolks (large or extra)
- 3/4 tsp. salt
- 1 tsp. sugar
- 1 pinch cayenne pepper
- 1 cup light olive oil
- 1 lime (large)
- 1/2 tsp. lime zest (finely minced)
- 1 tsp. curry powder (OR 1 tsp chili sauce, more or less to taste)
