- 500 grams diced beef
- 200 grams grape (/cherry tomatoes)
- 1 capsicum (red and 1 green, diced)
- 1 red onion (sliced thinly, omit if low FODMAP, swap with finely diced celery and 1/2 tsp of onion infused oil)
- 1 clove garlic (minced, or 1/2 tsp garlic infused olive oil for a low FODMAP option)
- 2 tsp. seasoning (Greek Yiros, We recently started buying Henry Langdon’s Greek Yiros seasoning mix from our local IGA, but if you want to make your own I found a good recipe here at one of my favourite food blogs)
- 1 cup water
- 100 grams feta (diced into 1cm squares)
- 100 grams baby spinach
- salt
- pepper
- fresh parsley (to serve)
