- 1 jalapeno (large, minced, seeds and all)
- 1 lb. ground beef (I used 85% lean)
- 3 Tbsp. chili powder
- 2 tsp. chili powder (chipotle)
- 2 tsp. cumin
- 1 cup beer (your favorite, I used a pale ale)
- 14.5 oz. diced tomatoes (fire-roasted)
- 14.5 oz. crushed tomatoes (fire-roasted, ****)
- 1 can water (just fill an empty tomato can with water)
- 1 can tomato paste
- 1 can pinto beans (drained and rinsed)
- 1 can black beans (drained and rinsed)
- 1 can kidney beans (drained and rinsed)
- 2 cups frozen corn (optional)
- 2 tsp. kosher salt (or to taste)
