Very nice. I left out the eggs. I use mild ital. sausage instead of chorizo. No olive so I used dill pickles. No problems with my dough. Rolled out between two pieces of parchment used pizza cutter to cut in to 10 rectangles. Filled middles with meat folded over smooched sides together with my fingers. Turned them over half way thru baking to get crispy. No stuff came out. Good and brown in 12 mins.

This was a bit time consuming, but absolutely worth it. I left off the hard boiled egg, green olive, and we dipped in sour cream and salsa. I suggest using parchment to fold over the empanada because they fall apart easily. Also, flip them 1/2 way through the baking.
