- 3 Tbsp. olive oil
- 1 onion (diced)
- 4 cloves garlic (minced)
- 1 Tbsp. fresh rosemary (minced)
- 1 Tbsp. chopped fresh thyme
- 1/2 tsp. salt
- 1 lb. stew beef
- 1/2 tsp. freshly ground black pepper (plus more to taste)
- 2 Tbsp. flour (all-purpose)
- 1 cup marsala wine (we don't drink wine so I don't have any Marsala on hand. I used 1/2 cup good quality grape juice + 1TBS red wine vinegar)
- 1 lb. butternut squash (peeled and cut into 1-inch cubes)
- 3 potatoes (medium sized, cut into 1-inch cubes)
- 1/3 cup dried tomatoes (chopped sun-)
- 4 cups beef broth
