- 1 aubergine (small, diced)
- 1 white onion (diced)
- 1/2 red pepper (diced)
- 3 cloves garlic (grated)
- 3 ginger (″ chunk of, grated)
- 3 fresh tomatoes (chopped into chunks)
- 2/3 red chillies (depending on your heat tolerance, I used 3 birdseye)
- 1 can plum tomatoes
- 1 Tbsp. tomato paste (/frito)
- 1 Tbsp. soft brown sugar
- 50 grams creamed coconut (block)
- fresh coriander (chopped)
- 1 Tbsp. ghee (for frying or you can use oil)
- sea salt
- 2 Tbsp. coriander powder
- 1 Tbsp. cumin powder
- 1 tsp. turmeric
- 1 tsp. paprika
- 3 cardamom pods (bashed)
- 1 Tbsp. tamarind paste
