- 1 lb. ground beef (grassfed, shredded leftover beef from a roast would work too!)
- 1 onion (medium, chopped)
- 3 carrots (large, chopped)
- 4 medium potatoes (cubed)
- 1/2 bunch kale (chopped)
- 4 cloves garlic (minced)
- 2 cups squash (cooked, pureed, I use leftovers from other meals - any sweet fall squash will do - acorn, butternut, etc)
- 2 qt. bone broth
- 3 tsp. italian seasoning
- sea salt (/pepper to taste)

this was a wonderful soup. I used chopped steak instead of ground beef and omitted the squash using carrots. it was really fresh and sweet smelling and really delicious. Thanks
