- 1 lb. cremini mushrooms (fresh, sliced into ¼ inch thick slices, aka baby portobello mushrooms)
- 1 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 2 Tbsp. cognac (or brandy)
- 2 Tbsp. butter
- 1/2 lb. onions (cut into medium strips the long way)
- 1 Tbsp. tomato paste
- 2 Tbsp. all purpose flour
- 2 cups beef stock
- 1 Tbsp. Dijon mustard (country, this is a product that mixes whole grain and smooth Dijon)
- 1 cup sour cream
- 1 1/2 lb. rib eye steak (trimmed, cut into cubes approximately 1½ inches)
- 1 tsp. kosher salt
- 1/2 tsp. freshly ground black pepper
- 1 Tbsp. all purpose flour
- 2 Tbsp. butter
- 1 Tbsp. olive oil
- 2 Tbsp. cognac (or brandy)
- chopped parsley (for garnish, optional)
- wide egg noodles (see note above)

Absolutely delicious I add garlic and cream mushroom soup, I tip be careful with the amount of mustard it can ruin your dish easily but this is absolutely DELICIOUS

This was very tasty!! The family loved it! I added Beef Consommé and Cream of Mushroom soup. Paired it with 2017 Petite Sirah by Michael David.

This recipe was awesome I made it with leftover prime rib from our Christmas dinner. The sauce was amazing! I just cube my leftover rib roast meat and heated it quickly with the butter skipping the flour. It was wonderful. I have tried to make stroganoff before and the meat is always tough. I never thought to use rib eye until I saw this recipe. I will be making it again.

Oh, wow! The complex flavors here were amazing! I prepared the recipe to the letter and it took me almost exactly 1.5 hrs. I was skeptical about covering ribeye in sauce and also with searing it on thr stove but didn't need to be. Ribeye was the perfect choice. Wouldn't change a thing. Huge hit with the fam.

I had some leftover wagyu rib roast, so my meat was particularly good when I made this, but I found that the recipe, exactly as written, was rich and absolutely delicious. I usually end up tweaking almost any recipe, after following it to the letter the first time, but this one was just right. I really wouldn't change a thing.

Absolutely fantastic
I did however change it up by simmering the meat until it fell apart with a fork about 2.5 hrs
