- beef
- 4 shallots (Small, : Topped, tailed and peeled.)
- 2 Tbsp. plain flour
- 1 tsp. mustard (Powdered, optional.)
- 1/8 tsp. coarse sea salt
- 1/8 tsp. ground black pepper
- 500 grams beef shin (: Cut into large chunks, between 3cm and 5cm.)
- 50 grams butter
- 400 grams root vegetables
- 2 cms carrots
- 50 grams celery (: Cut into 1cm slices)
- 4 garlic cloves (: Peeled and bashed with the back of a knife.)
- 300 mL dark beer (: A porter or stout works wonderfully but I personally favour a dark wheat beer.)
- 1 tsp. dried thyme
- 1 bay leaf
- 35 grams suet (Dried)
- 70 grams plain flour
- 1 tsp. baking powder
- 1 tsp. grainy mustard
- 1/2 tsp. dried thyme
