- 1/2 cup all-purpose flour
- 1 tsp. kosher salt
- 1/2 tsp. ground black pepper (fresh)
- 1 tsp. paprika (smokey)
- 3 lb. boneless chuck roast (lean, trimmed of fat and cut into 2 inch pieces)
- 4 Tbsp. oil (I use coconut or avocado which will handle a high heat)
- 2 cups onions (coarsely chopped, 2 medium)
- 4 cups beef stock (fresh or canned)
- 2 cups red wine
- 3 Tbsp. tomato paste
- 4 garlic cloves (minced)
- 2 cups carrots (cut into 2” pieces, 12-14 oz.)
- 2 cups crimini mushrooms (whole, small, 12 oz.)
- 1 1/2 lb. fingerling potatoes (small 2-3 inch, or yellow potatoes cut in 2” chunks)
- 2 Tbsp. chopped fresh thyme
- 2 Tbsp. fresh rosemary (chopped)
- 2 Tbsp. finely chopped fresh parsley
