- 3 Tbsp. annatto oil

- 1 kg beef chuck (or oyster blade, cut into 4cm dice)
- 2 Tbsp. vegetable oil
- 50 grams butter
- 2 shallots (red Asian, chopped)
- 3 garlic cloves (chopped)
- 500 mL chicken stock
- 250 mL coconut water (young)
- 250 mL pineapple juice
- 200 grams carrots (peeled and cut into 2 cm dice)
- 200 grams potato (peeled and cut into 2 cm dice)
- 100 grams shallots (red Asian, peeled and left whole)
- 100 grams broad beans (skinned and podded, about 300 g in their pods)
- 1 Tbsp. fish sauce
- 1 tsp. sugar
- 2 red chillies (long, julienned)
- jasmine rice (Steamed, to serve)
