👍👍 replaced cornstarch with tapioca powder to the same effect. Had plenty of compliments, thanks for the recipe!

I liked how simple and easy this was, the combo of ingredients was great and the drippings with the onion soup and mushrooms made the best gravy EVER! I did sub beef stock for the water because I wanted a very beefy gravy (personal preference). However, the cook time was WAY off, 2 1/2-3 hours for a 3 pound roast would seriously produce shoe leather. I used a tried and true cooking method, 500° uncovered for 20 minutes, 350° covered with foil for 40 minutes, let it rest for 20 minutes and had a perfect medium rare roast (I pulled it out when my meat thermometer read 130°). Other than that, I would absolutely recommend the recipe and will be making it again!
