- 1 jalapeño (seeded and chopped)
- 1 thai chile (stemmed and seeded, optional)
- 1/2 cup chopped fresh cilantro
- 1/2 cup olive oil
- 1 cup cotija cheese (Crumbled, or Monterey Jack cheese)
