- 800 grams beef (1 lb 12 oz shin of, in thick slices on or off the bone)
- 2 onions (sliced)
- 4 large garlic cloves (peeled and thinly sliced)
- 2 celery sticks (trimmed and thinly sliced)
- 4 thyme sprigs
- 1/2 glass red wine
- 3 tsp. dulse (–3 tsp powdered smoked, or 1 handful home-smoked dulse)
- 300 mL chicken stock (ml, 10½ fl oz, or water)
