- 1 brown onion
- 5 garlic cloves
- 2 carrots
- 2 celery sticks
- 3 sprigs thyme (or one tsp dried)
- 1 bay leaf
- 2 Tbsp. tomato paste
- 2 cans tomatoes (400g)
- 1 cup red wine (or use one cup extra beef stock)
- 4 cups beef stock
- salt
- pepper
- 4 cups cheese sauce (See my simple cheese sauce here)
- 1 cup grated mozzarella cheese
- smoked paprika (optional)
