- 3 Tbsp. olive oil (or avocado oil, divided)
- 4 oz. mushrooms (baby bellas also called creminis or white button if unavailable, trimmed and quartered)
- 1 onion (finely chopped)
- 3 carrots (peeled and cut into 1/2-inch pieces)
- 2 Tbsp. tomato paste
- 4 garlic cloves (minced)
- 1/2 cup dry red wine (or 1/2 cup water)
- 3 Tbsp. all purpose flour
- 2 cups beef broth
- 1 Tbsp. soy sauce
- 1 Tbsp. worcestershire sauce
- 1 bay leaf
- 1 cup frozen peas
- 1 1/2 tsp. chopped fresh thyme (divided)
- 1 large egg (lightly beaten)
- 1 pie dough (9-inch store-bought, round or your own made-from-scratch pie crust)

I made this using my leftover prime rib from Christmas dinner. I made the broth and just slightly heated the cold beef to allow the juices to heat up, removed the beef. I prepared the rest of the recipe as stated with exception of dissolving 1 tbsp of corn starch in broth to thicken very slightly. I added 1/2 bag of frozen pearl onions to the broth and simmered about 4 minutes. Prepared a pie crust with butter and coconut oil, adding salty wench spice. Baked until the pie crust was browned. Definitely a recipe keeper. The pearl onions really added a nice touch to the vegetables.

Made this numerous times and it's always loved by everyone that eats it I was short on tomato paste so, I substituted 1/2 can of pizza sauce..... still tasted AWESOME with a little zing!!!
