- beef brisket (6 ox., or cheek, sinew removed)
- 4 cups coconut milk
- 3 cups coconut cream
- 1 1/2 Tbsp. palm sugar
- 2 Tbsp. fish sauce
- 3 cups coconut milk (– optional, see method)
- 3 kaffir lime leaves (torn)
- 3 green chilies (or long red, cut in half and deseeded)
- 1 handful thai basil leaves
- 4 Tbsp. peanuts
- 7 red chilies (dried long, deseeded, soaked and drained)
- 1 pinch salt
- 1 tsp. coriander root (scraped and chopped)
- 1 1/2 Tbsp. galangal (chopped)
- 1 Tbsp. lemongrass (chopped)
- 3 Tbsp. shallot (chopped red)
- 2 Tbsp. chopped garlic
- 1/2 nutmeg (coarsely pounded and briefly roasted)
