- 2 Tbsp. vegetable oil
- 1/4 cup palm sugar
- 4 Tbsp. fish sauce (Nam Pla)
- 1 1/2 tsp. tamarind paste (use white vinegar if unable to locate)
- 1 inch cinnamon stick
- 5 chilies (dried red spur, without seeds)
- 3 Tbsp. garlic
- 2 Tbsp. shallots
- 2 Tbsp. lemongrass (with outer leaves removed)
- 1 Tbsp. ginger
- 1 tsp. lime rind (Kaffir, grated)
- 1 Tbsp. cilantro (chopped)
- 1 tsp. salt
- 1 tsp. coriander seeds
- 1/2 tsp. cumin seeds
- 1 tsp. black pepper
- 2 cloves
- 1 tsp. shrimp paste
