- 4 red chillies (dried)
- 5 curry leaves
- 1 Tbsp. chilli powder
- 1 Tbsp. turmeric powder
- 150 mL white wine vinegar
- 5 Tbsp. water
- 250 mL oil
- 1 kg chuck steak
- 1 Tbsp. oil
- 170 grams onion (1 large finely dices)
- 4 cloves
- 4 green cardamom pods
- 2 green chillies (finely chopped)
- 2.5 cms ginger (piece of, grated or finely chopped)
- 3 garlic cloves (crushed)
- 2 red chillies (dried)
- 1 Tbsp. curry paste (make your own using the recipe on this page, or use store bought curry paste)
- 2 coriander powder (level teaspoon)
- 1 cumin powder (level teaspoon)
- 1 tsp. salt (or to taste)
- 200 mL water
- fresh coriander (to garnish, optional)
