- 1/2 lb. salt pork (or uncured bacon, diced small)

- 1/2 btl. dark beer (such as Guinness, 3/4 cup)
- 1 1/2 cups tomatoes (pureed, Cento canned kitchen ready is what we used)
- 6 cups beef stock
- 2 tsp. caraway seeds
- 2 tsp. marjoram
- 2 tsp. thyme
- 8 parsley (stems)
- 4 garlic cloves (medium peeled)
- 2 bay leaves
- 2 lb. yellow potatoes (peeled and cut into ½ inch dice)
- kosher salt
- black pepper
- sour cream (for serving)
- scallion greens (Chopped, for garnish, optional)
- rye bread (Russian, for serving)
