Added can of black beans, reduced meat to 1.5 lbs. Only two layers.
Serve with taco toppings - shredded lettuce, onions, tomatoes, olives, sour cream and salsa

great just basic idea to run with. i crisped up the tortillas with just some oil, used taco sauce instead of enchilada sauce (not a huge fan of it), and added black beans. its definitely upped the flavor and kept it crispy instead of mushy. i also used turkey instead of beef, personal preference and healthier. it was delicious!
