I made this due to a request from a Mexican co-worker. These are Argentinian style, and he said they were some of the best empanadas he has had. The finished filling was a bit drier than I expected because it was pretty saucy when I was cooking it, but I was told it was exactly how it should be.
I’m about to make this again for another work potluck. Photos are before and after baking (double recipe).
Note: Divide dough into 8, not 10.
