The end result tasted good but the directions are confusing. The directions say to add 2 spoonfuls of meat mixture into the 3" cut of dough but that's way too much. The directions also say to place coat one side of the dough cutting after you've filled it with the meat mixture and that's not possible.
I will make it again, but with only one tablespoon of meat mixture in each empanada and will use another recipe to discover when to coat the dough prior to adding the meat.

Filling was excellent! We actually use the filling recipe for tacos. This also works great with ground turkey.

The filling was delicious; probably our go-to taco filling from now on. However, the measurements for the dough circles must have been wrong. I could barely get a Tbs of filling in them. I used tomato sauce and frozen corn and added a little shredded cheese to the empanadas.
