- 1/2 tsp. turmeric powder (optional, refer notes on optional ingredients)
- 1 1/2 tsp. chilli powder
- 1 1/2 Tbsp. chili flakes
- 1 1/2 cups coconut milk (thin, see notes above if using coconut milk powder)
- 1 cup coconut milk (thick, see notes above)
- salt (to season)
- 3 Tbsp. oil
- 1 sprig curry (leaves, 5-6, substitute with 1 bay leaf)
- 2 Tbsp. garlic ginger paste (4 garlic cloves and 2-inch piece of ginger should do)
- 1 onion (medium-sized, finely sliced)
- 1 piece pandan leaf (3 inches long)
- 2 inches cinnamon
- 4 cardamom (slightly bruised)
- 1 tomato (medium-sized, chopped, optional, refer notes on optional ingredients)
