- 3 cups chicken stock
- 1 cup mushrooms (sliced)
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1 cup potatoes (peeled and cubed)
- 1 red onion (cut in small wedges)
- 1/3 cup cold water
- 1/3 cup cornstarch
- 1 cup cheddar cheese (shredded and divided)
- 8.5 oz. corn muffin mix (1 package)

Directions
- Cut sausage into 1/4-inch slices and set aside.
- In a large saucepan or Dutch oven, bring broth to a boil.
