- 2 kilograms duck (Luv-a-duck)
- 200 grams baby spinach (washed)
- 1 cinnamon stick
- banana leaves (I use frozen) - enough to wrap the duck (clean and wipe dry)
- 180 grams shallots
- 40 grams garlic
- 15 grams candlenuts
- 10 grams shrimp (granules, belacan)
- 25 grams galangal (frozen was used here)
- 15 grams ginger
- 12 grams turmeric (frozen, use fresh if available)
- 5 grams dried chillies
- 60 grams lemongrass (minced, frozen is used in this recipe)
- 25 grams palm sugar
- 4 grams black peppercorn (freshly grinded)
- 8 grams coriander seeds (dry roast in a pan and ground)
- 3 Tbsp. lime juice
- 2 Tbsp. canola oil
- 2 Tbsp. water
- 3 tsp. salt (or season to suit your taste)
- 3 kaffir lime leaves (finely sliced)
- 2 bay leaves
