- 1/4 cup Wish-Bone Light Italian Dressing
- 1 lb. boneless skinless chicken thighs
- 1 onions (medium, coarsely chopped)
- 1 red bell pepper (medium, coarsely chopped)
- 15 oz. black beans (rinsed and drained)
- 1 Tbsp. chopped fresh cilantro
- 2 cups brown rice (cooked)
- 1/4 cup barbecue sauce

Directions
- Preheat oven to 425°.
- Stir together Wish-Bone Light® Italian Dressing and barbecue sauce in large bowl. Add chicken, onion, red pepper and beans and toss to coat.
- Evenly divide mixture on four 12 x 18-inch pieces heavy-duty aluminum foil. Wrap foil loosely around chicken mixture, sealing edges airtight with double fold. Arrange pouches seam-side-up on baking sheet. Bake 20 minutes or until chicken is thoroughly cooked.
- Carefully open pouches and sprinkle with cilantro.
- Serve with hot cooked rice.
