- 2 lb. waxy potatoes
- 1 1/2 cups flour
- 1 egg
- 1 cup basil (packed chopped)
- 1 cup Parmesan
- 1 pinch nutmeg (and salt)

Directions
- Peel potatoes and then boil 2lbs of waxy potatoes till tender.
- Mash potatoes with the basil and parmesan
- Spread out 1/2 cup of flour and add potatoe mixture. Sprinkle remaining flour over potatoes and mix lightly. Break one egg into mixture. Add the pinch of salt and nutmeg.
- Roll dough into long strands and cut into about 1 inch pieces
- Boil water and cook gnocchi in batches for 3 to 4 minutes each batch.
