- 1/2 cup cooked ham (diced, I buy pre-diced from the grocery store)
- 6 slices bacon (cooked and crumbled)
- 4 large eggs
- 3/4 cup half and half
- 3/4 tsp. kosher salt
- 1/4 tsp. black pepper
- 1/8 tsp. ground nutmeg
- 1 1/3 cups Gruyere cheese (shredded divided)
- 5 oz. frozen chopped spinach (defrosted and wrung out in paper towels to remove excess moisture)
- 1/4 cup canned mushrooms (chopped, wrung out in paper towel to remove excess moisture)
- fresh parsley (minced)

I used a couple egg whites instead of just using the whole egg , increased the nutmeg & NO salt needed- the cheese had enough salt-
Made it light and fluffy! Came out perfectly
