- 2 cups water
- 1 1/2 cups barley (that has been soaked for a mnimum of 6 hours)
- 1 1/2 cups water
- 1 1/2 cups low sodium chicken broth (or bone broth)
- 8 oz. sliced mushrooms (I used baby bellas)
- 1/4 cup onion (sliced)
- 2 sprigs fresh thyme
- 1 Tbsp. minced garlic
