- 1 Tbsp. EVOO
- 2 garlic cloves (crushed)
- 1 tsp. dried herbs (mixed, I used thyme, oregano and basil)
- 1/2 cup shallots (chopped)
- 1/2 tsp. chilli flakes
- 2 carrots (cut into thick slices)
- 1/2 packet mushrooms (cleaned and thickly sliced)
- 1/3 cup tomato puree
- 1 Tbsp. tomato paste
- 1 tsp. sugar
- 1/3 cup barley (soaked in warm water for 30 minutes or an hour)
- 1/4 cup lentils (soaked in regular tap water for 30 minutes. I used yellow moong dal. You can use lentil of your choice)
- 1 cup vegetable stock (or chicken stock, I used low sodium chicken stock)
- 2 cups water
- salt (to taste)
- ground black pepper (freshly, to taste)
- cilantro leaves (fresh, for garnish, optional)
