The simplest recipes are not only the best, they are also the most healthy. This dressing can be eaten on a brown rice detox, no gluten, no sugar, no refined foods, no vinegar. My friend Mindy and I were so delighted by this chicken salad that we especially asked the recipe from the waiter at a Madrid tapas bar. He went to the kitchen and came back with these 4 ingredients. Turns out it was the simplest recipe. The trick is using the freshest lemon and the best olive oil you can find. And don't forget good whole salt.
Ingredients
- 2 Tbsp. lemon juice (freshly squeezed)
- 1/2 tsp. mustard powder
- 1/4 tsp. sea salt (Maldon flake)
- 4 Tbsp. extra-virgin olive oil
Directions
- Whisk lemon, mustard and salt together in a bowl
- Slowly drizzle the olive oil while you continually whisk
- Alternate recipe: Shake all ingredient together in a glass jar until emulsified
