- 1 lb. pork shoulder (coarsely ground)
- 1 lb. ground veal (coarsely)
- 1 lb. ground lamb (coarsely)
- 1/2 lb. chicken livers (finely chopped)
- 1/2 cup sage leaves (minced fresh)
- 1 onion (large, finely diced)
- 2 stalks celery (finely diced)
- 2 carrots (large, finely diced)
- 1 btl. dry red wine
- 2 cups chicken stock
- 2 cups veal stock (you can use all chicken if you'd like)
- 28 oz. Italian tomatoes (whole peeled, drained and squeezed between your fingers into medium-sized chunks, liquid reserved)
- 1/2 cup fresh basil leaves (chopped)
- 1/2 cup fresh parsley leaves (chopped)
- 4 Tbsp. butter
- 2 cups heavy cream
