- 1 medium yellow onion (thinly sliced)
- 4 Tbsp. flour
- 12 oz. guinness (Extra Stout beer)
- 14.5 oz. beef broth
- 1 Tbsp. Dijon mustard
- 1 Tbsp. Worcestershire sauce
- 2 Tbsp. brown sugar

- 1/4 tsp. ground pepper
- 1 lb. russet potatoes (peeled and chunked)
- 4 Tbsp. butter
- 1/2 cup milk

Directions
- Cook sausage according to package directions.
- Gravy: In a large skillet, over medium-high heat, cook and stir onions in butter for about 20 minutes until caramelized.
- Add flour; cook and stir about 2-3 minutes until golden brown.

Pretty good. Might reduce the amount of brown sugar a bit next time. Not traditional, I know, but mushrooms would be a really nice addition to this gravy. Not a meal I’d make regularly, but would make again.
