This is delicious! I followed the recipe, using extract and not banana oil. I also added 1/2 t rum.
The only thing that I noticed is this is definitely thin like a coffee syrup, not a sauce. I think I would have liked it with another 1/2 t rum just to deepen the flavor past a rich buttescotchy-banana.
Even my non sugar-free husband thought it was delicious over his full-sugar chocolate gelato.
I served it over a batch of 3-ingredient 5-minute ice cream from lowcarbsosimple.com (I am moving away from sugar over time...) which I made with hazelnut cream. OMG.
