Description
It's easy to overlook banana's culinary pedigree since it's become such a staple snack for kids and adults alike (plus it's portable, making it all the more convenient). But the fruit's taste and texture make it ideal for using in baking up muffins and quick breads and cakes, which will be all the more moist. Here, banana is cut into pieces and folded into a yeast batter that is heady with the aroma of grated fresh ginger.

- 250 grams wheat flour
- 2 Tbsp. yeast
- 100 grams white sugar
- 50 grams brown sugar
- 1 banana (ripe)
- 1 cm ginger (grated)
- 100 grams butter (melted)
- 150 grams cream
- 2 eggs
- 1 Tbsp. honey

Directions
- Preheat the oven to 400°F.
- Sift the flour and combine with the yeast, sugars and ginger.
- In a separate bowl, place the liquid ingredients: butter, eggs, honey and cream. Whisk together and add the flour mixture. Stir to combine.
- Cut the banana into pieces and stir into the mix. Pour batter into greased muffin tins with liners. Bake for 25 minutes.
