It turned out better than expected considering the amount of substitutions we made. Silken tofu for an egg, were able to use vegan butter, used 2 teaspoons of baking soda instead of 1 teaspoon of both baking soda and powder, half a cup of banana and half cup of chopped strawberries instead of a cup of banana, 1/4 cup of almond milk for the vanilla extract, and was able to use a gluten free flour. I know that’s a lot of substitutes, but the base of the recipe is the same and it turned out very well with the temp and baking time. We sacrificed airiness with all the subs, but it had excellent structure and moisture! We also used 1/4 cup of sugar and it was still sweet! We couldn’t have done this without the recipe.

I’m pretty happy with these,some raisins or perhaps a little honey to sweeten them up for those with a sweet tooth As some at home complained that it wasn’t sweet enough. And 18 minutes cooking time was to long,mine were over done at 16 minutes. They were all eaten right away,so that’s a win in my book.

I found the dough to be a bit dry and thick even following the recipe. Next time I'll try adding another banana.. overall a good recipe.
